blueberry banana parfait {the sloppy chef series}

I haven't blogged about food in a while which is is strange, because I eat food every single day.





Today's recipe is brought to you by the letter "B."

I really wanted to keep with the "B" theme and entitle this, "Blueberry Banana Barfait," but I was afraid people might think this was the aftermath of too much alcohol.

Which isn't entirely out of the realm of possibility.

In which case, I would have called it, "Blueberry Banana Binge Barfait." 

(You'll notice I made my barfait in a large alcohol-type glass.  And you'll further notice my blueberry stash is in a champagne glass.)

This is my favorite breakfast right now.  Especially since blueberries are in season.  At least I think they are.  I've seen them everywhere, so I'm just going to say they're in season.  Make it so.

Except Violet Beauregarde.  She's never in season.

The recipe is pretty darn easy.  But I do start with my own homemade granola.  Yes, it's worth it to make your own.  It comes together very quickly.
 
And it goes away very quickly if you're married to Philly.

Which means I always have to hide a secret stash or I'd never be able to have my favorite breakfast.

Don't tell him.

For the granola:

In a giant bowl, mix together:

4 cups old-fashioned oats
1 cup chopped nuts* (I use a combo of almonds and walnuts)
1/2 cup ground flaxseed meal
1/2 cup wheat germ (contrary to popular opinion, wheat germ is not contagious)
1/2 t. salt
1 t. ground cinnamon

*I chop up a bunch of nuts at the same time and keep them in the fridge so they're ready to go at a moment's notice.



On the stove, bring to low boil (about 5 minutes) and stir:

1/4 cup honey
1/4 cup maple syrup
4 T. brown sugar (it tastes so good)
6 T. olive oil
1 T. water

That's some serious bubbling. You might want to knock it down a notch.


Most importantly, please have a cute pig spatula with which to stir, as it really improves the flavor of the granola.


Slowly pour the honey mixture into the oat mixture, stirring all the while.  Mix thoroughly so all the little bitty parts are covered.

Spread on a large baking sheet (mine's 13"x18")



Bake at 275 for 30 minutes.  Stir.  Bake another 20 minutes.

Remove from oven and stir again then cool.  Be sure and drop some on the floor for your doggie.  Doggies like that.

Yum! 


For the Barfait:

1/2 cup Fage nonfat Greek Yogurt (use whatever you like--this is my fave)
1/2 cup fresh blueberries
1 sliced banana
1/4 cup yummy granola

It's so tasty. Not barfy at all.

  1. This is my husband's favorite breakfast...although I haven't made granola before. Your recipe looks delicious and I do have a giant bag of flaxseed meal to use up. (I use it for the dog treats, too.) My bottle of real maple syrup flew out of the pantry and exploded, so I'll have to go get some.
    I keep going back and looking at the pics...it looks so good that I'm going to make some for a bedtime snack. Not barfy at all, indeed.

  3. That looks really good! We did a tv show theme for our employee appreciation day this past year and I did not know that Violet was actually in The 70's Show... duh. I've never made granola before, I've always wanted to... just haven't. Yum!

    Yum! Color me inspired.. I shall ask the hubs to make us homemade granola! ( he's the cook- I generate ideas and yell things like " yay!" In the kitchen.)

  17. This looks so good, but I have a confession to make...I don't like blueberries. Lame...I know. I would make it with raspberries or strawberries though. But then I would be messing with the whole BBB name. Maybe I'll just make the granola and call it good...no, great! Thank you for sharing it at What We Accomplished Wednesdays. Have a great week!
